Our involvement started at lot selection, cupping across multiple day-lots to identify batches with clean fermentation, vibrant fruit expression, and controlled alcohol notes. Working with local producers, we aligned on cherry ripeness thresholds and separation protocols to minimize underripe and over-fermented fruit.
During processing, we collaborated on drying density, bed rotation frequency, and shade management, ensuring even dehydration and stable cup performance. Particular attention was given to drying pace to preserve fruit complexity while avoiding phenolic or overly boozy characteristics.
