Our involvement began at the pre-harvest stage, aligning cherry selection criteria and ripeness standards to ensure uniformity. During processing, we worked closely with the farm to fine-tune fermentation timing, water usage, and washing protocols—prioritizing clean flavor development and structural balance over aggressive fermentation expression.
Drying was closely monitored to achieve stable moisture and water activity, supporting shelf life, roast predictability, and repeatability across batches—key requirements for commercial and wholesale clients.
