"This Rorecho lot from Sidama was selected to showcase the vibrant fruit character and remarkable clarity that have made the region one of Ethiopia's most celebrated coffee-producing areas. Grown at elevations exceeding 2,000 meters, the coffee develops exceptional sweetness, complex aromatics, and refined acidity through slow cherry maturation. Our involvement began with careful cherry selection, ensuring only fully ripe fruit entered processing. Each lot was hand-sorted before being naturally dried on raised African beds under carefully managed conditions. Drying was closely monitored to promote even moisture reduction while preserving the coffee's delicate floral character, layered fruit complexity, and long-term stability. Throughout processing, strict quality control measures were applied to maintain consistency from harvest through export. The result is a clean natural coffee that expresses sweetness and complexity without excessive fermentation, offering excellent roast predictability and cup consistency. This coffee was selected specifically for its bright, fruit-forward profile with exceptional clarity, consistent roasting performance across production batches, outstanding suitability for premium single-origin programs, and its balanced sweetness, floral elegance, and refined acidity.
